Japanese restaurant near Okazaki, Kyoto.
A gyoza restaurant was renovated to create a new restaurant for a young up-and-coming Japanese chef. The original building was occupied by a Japanese restaurant, but due to aging, the details of the Japanese architecture were obscured. Since the existing countertop was made from a solid piece of wood, only the top layer of the wood was removed so that the counter could be reused. The kitchen layout and the interior finishes were also updated to reference the design of the original restaurant.
By redesigning the space while retaining certain portions to past designs, the restaurant has been reborn as an elegant modern Japanese restaurant with 7 seats at the counter.

若い新進気鋭の日本料理のシェフの独立に合わせ、元々は餃子屋だった居抜き店舗を改修した。
その昔は和食屋だったらしく、随所に残る日本的なディテールや汚れて見えなくなっていたが、無垢のカウンターを削り、素地で見せられるようにして残しつつ、厨房のレイアウトや全体の仕上げや素材を過去のものと合わせつつも変更することで、カウンター7席の上品な日本料理店へ生まれ変わった。
